lemon coconut macaroons

Ever have one of those cravings that just CANNOT be quenched? All the time, right? Ok, maybe that's just me.


My best friend called me the other day in need of some unsugared recommendations to help stop him from giving into his sweet tooth. Knowing he loves fruity as opposed to chocolate desserts and has a tiny Brooklyn apartment, I knew he needed something easy and fresh. My first thought? Coconut.


These no-bake coconut macaroons are lightly sweet with just a touch of lemon to make them a perfect cooling treat on a hot day. Plus, without needing a mixer, food processor or oven, these are easy to whip up in no time, whenever that insatiable craving hits.


  • 3/4 c. dried unsweetened shredded coconut
  • 1/4 c. almond flour
  • 1/2 c. local honey
  • 1/8 c. coconut butter
  • 1 T. lemon juice
  • 1/8 t. sea salt (optional)

Heat the coconut butter in the microwave or on the stove top and stir until smooth. Stir the other ingredients into the melted coconut butter until well mixed. Scoop or roll into 1 inch balls and place on a cookie sheet in the refrigerator to cool. If stored in the refrigerator, these macaroons will keep for over a week.
